Instructions
In a large pot, sauté sliced onions until caramelized, about 15 minutes.
Add chopped carrots, celery, sweet potato, garlic, rosemary, bay leaf, salt, and pepper. Cook for 5 minutes.
Pour in beef broth and coconut milk, bring to a boil, then reduce heat and simmer for 45 minutes until vegetables are tender.
Add pre-cooked beef and chopped cabbage, cook for an additional 10 minutes.
Remove bay leaf, stir in apple cider vinegar, and adjust seasoning as needed before serving.
