A hearty and flavorful stew perfect for Whole30, featuring tender beef and caramelized onions in a rich broth.

Ingredients

Vegetables

  • 1 large Sweet potato
  • 2 carrots Carrots
  • 2 stalks Celery
  • 1 large Yellow Onion (sliced for caramelizing)
  • 1 large Red Onion
  • 2 cups Pre-cooked Stew Meat of Choice
  • 2 cups Green Cabbage (chopped)
  • 4 cups Beef Broth
  • 1 can Coconut Milk (full fat)
  • 1 tsp Dried Parsley
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Fresh Rosemary (chopped)
  • 3 cloves Garlic (minced)
  • 1 bay leaf Bay Leaf
  • to taste Salt and Pepper Salt and Pepper

Instructions 

  • In a large pot, sauté sliced onions until caramelized, about 15 minutes.
  • Add chopped carrots, celery, sweet potato, garlic, rosemary, bay leaf, salt, and pepper. Cook for 5 minutes.
  • Pour in beef broth and coconut milk, bring to a boil, then reduce heat and simmer for 45 minutes until vegetables are tender.
  • Add pre-cooked beef and chopped cabbage, cook for an additional 10 minutes.
  • Remove bay leaf, stir in apple cider vinegar, and adjust seasoning as needed before serving.
