A moist, flourless cake made with whole oranges, offering a vibrant citrus flavor and a tender crumb.

almond meal (ground almonds)
Instructions
Boil the oranges three times for ten minutes each, or once for forty minutes. Cool and puree until marmalade-like.
Mix orange puree, eggs, sugar, almond meal, and baking powder until just combined.
Pour batter into a greased and parchment-lined 23cm (9 inch) pan.
Bake at 160°C (320°F) for 60 minutes. Cool before removing from pan.
Notes
This cake is best enjoyed after cooling to develop its moist texture and vibrant flavor.
