This hearty breakfast casserole combines eggs, cheese, and your choice of meats and vegetables for a delicious start to your day.

Ingredients

Egg Mixture

  • 6 large eggs
  • 1 cup milk or cream
  • 4 cups bread cubes or hashbrowns (day-old bread recommended)
  • 1.5 cups shredded cheese (cheddar, mozzarella, or blend)
  • 1 to 2 cups sautéed vegetables (such as bell peppers, mushrooms, spinach)
  • 1.5 cups cooked breakfast meats (optional for vegetarian version)

Seasonings

  • to taste salt, pepper, garlic powder, and herbs

Instructions 

  • Cook breakfast meats and sauté vegetables until tender. Beat eggs with milk, seasoning with salt, pepper, garlic powder, and herbs.
  • Grease baking dish and layer bread cubes or hashbrowns as the base.
  • Sprinkle cooked meats and sautéed vegetables over the base.
  • Pour the egg mixture over the layers, ensuring even coverage.
  • Top with cheese for a golden crust, then bake at 350°F (175°C) for about 45 minutes.

Notes

For a vegetarian version, omit the breakfast meats and add more vegetables.
