A quick and colorful vegetable stir fry packed with fresh flavors and vibrant textures, perfect for a healthy weeknight dinner.

Ingredients

Vegetables

  • 2 tablespoons vegetable oil
  • 1 red bell pepper red bell pepper, sliced
  • 1 yellow bell pepper yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 medium carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 green onions green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with water (optional, for thickening)

Garnish

  • to taste sesame seeds (optional)

Instructions 

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add garlic and ginger; sauté for 30 seconds.
  • Add broccoli, snap peas, and carrots; stir-fry for 3–4 minutes.
  • Add bell peppers; cook for 2 minutes.
  • Stir in soy sauce and sesame oil; add cornstarch mixture if desired, cook 1 minute.
  • Remove from heat, stir in green onions, garnish with sesame seeds, and serve.

Notes

Use fresh vegetables for best flavor and texture.
