A hearty and nutritious vegetable soup perfect for a cozy meal, packed with fresh vegetables and flavorful herbs.

Ingredients

Oil and Fat

  • 3 tablespoons olive oil
  • 2 tablespoons ghee or unsalted butter

Vegetables

  • 2 leeks leeks (white part only, quartered and sliced thinly)
  • 3 carrots carrots, peeled and diced small
  • 3 parsnips parsnips, peeled and diced small
  • 3 celery ribs celery, diced small
  • 2 small red potatoes red potatoes, peeled and diced small

Seasonings

  • Salt Salt
  • Black pepper Black pepper
  • 1 teaspoon dried parsley
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, pressed through garlic press
  • 1 14.5 ounce can whole tomatoes, drained and seeded, and finely diced

Broth

  • 6 cups vegetables broth or chicken broth
  • 1 cup peas
  • 1 cup kale, chopped
  • 1 tablespoon chopped fresh parsley

Additional

  • Small squeeze lemon lemon juice

Instructions 

  • Gather and prep all ingredients as listed.
  • Heat ghee and oil in a large pot, then cook leeks, carrots, parsnips, celery, and potatoes with salt and pepper for 3-4 minutes until translucent.
  • Add Italian seasoning, parsley, and garlic; stir to combine.
  • Pour in tomatoes and broth, bring to a boil, then simmer covered for 15 minutes until vegetables are tender.
  • Turn off heat, stir in peas, kale, parsley, and lemon juice; season with salt and pepper as needed before serving.

Notes

Feel free to customize with your favorite herbs or add a splash of hot sauce for extra flavor.
