Instructions
Gather and prep all ingredients as listed.
Heat ghee and oil in a large pot, then cook leeks, carrots, parsnips, celery, and potatoes with salt and pepper for 3-4 minutes until translucent.
Add Italian seasoning, parsley, and garlic; stir to combine.
Pour in tomatoes and broth, bring to a boil, then simmer covered for 15 minutes until vegetables are tender.
Turn off heat, stir in peas, kale, parsley, and lemon juice; season with salt and pepper as needed before serving.
Notes
