These colorful vegetable pancakes are a fun and healthy snack for kids, packed with veggies and crispy on the outside.

Ingredients

Dry Ingredients

  • 3/4 cup Rice Flour
  • 1/4 cup Chickpea Flour (Besan or Gram Flour)
  • 2 tsp Sesame Seeds
  • 1/2 tsp Baking Powder

Fresh Vegetables

  • 1 cup Thinly sliced cabbage
  • 1/2 cup Finely chopped carrots
  • 1/2 cup Finely chopped French beans
  • 1/2 cup Chopped mushrooms
  • 1/2 cup Chopped Bell Peppers (or zucchini)
  • 1/4 cup Chopped green onions
  • 3/4 tsp Salt

Liquids

  • 1/4 cup Water (start with and add as needed)
  • 2 tbsp Toasted sesame oil (can be subbed with vegetable oil)
  • 2 tbsp Canola oil (or other vegetable oil)

Instructions 

  • Mix rice flour, chickpea flour, sesame seeds, baking powder, salt, and water to form a thick batter.
  • Add chopped vegetables to the batter and let rest for 10 minutes.
  • Heat oils in a pan, pour 2 tbsp of batter for each pancake, and cook 4-5 minutes until golden, then flip and cook 3-4 minutes.
  • Serve hot with a dip of choice.

Notes

Ensure vegetables are finely chopped for even cooking and texture.
