Delicious and fluffy vegan pancakes made with protein-rich quinoa flour, perfect for a healthy breakfast or brunch.

Ingredients

Dry ingredients

  • 125 g quinoa flour (gluten-free if required)
  • 1 tsp baking powder (gluten-free if required)
  • ½ tsp baking soda (gluten-free if required)

Wet ingredients

  • 240 ml plant milk (any plant milk)
  • 2 tsp lemon juice
  • 4 tsp maple syrup
  • 1 tbsp oil for frying (mild coconut oil recommended)

Toppings

  • maple syrup
  • seasonal fruit
  • chopped and pan-toasted almonds

Instructions 

  • Mix quinoa flour, baking powder, and baking soda in a bowl.
  • Whisk in plant milk, lemon juice, and maple syrup until smooth.
  • Heat a non-stick pan with oil and pour 2 tbsp batter per pancake. Cook 2 minutes per side until golden.
  • Keep pancakes warm while cooking remaining batter.
  • Serve pancakes topped with toasted almonds, seasonal fruit, and a drizzle of maple syrup.

Notes

For extra flavor, add a pinch of cinnamon or vanilla to the batter.
