Delicious and fluffy vegan pancakes made with protein-rich quinoa flour, perfect for a healthy breakfast or brunch.
Ingredients
Dry ingredients

Wet ingredients

plant milk

Instructions
Mix quinoa flour, baking powder, and baking soda in a bowl.
Whisk in plant milk, lemon juice, and maple syrup until smooth.
Heat a non-stick pan with oil and pour 2 tbsp batter per pancake. Cook 2 minutes per side until golden.
Keep pancakes warm while cooking remaining batter.
Serve pancakes topped with toasted almonds, seasonal fruit, and a drizzle of maple syrup.
Notes
For extra flavor, add a pinch of cinnamon or vanilla to the batter.
