Delight in these tangy, sweet vegan lemon bars with a buttery crust and creamy lemon filling, perfect for a refreshing treat.

Instructions
Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
Mix melted vegan butter, sugar, and salt; add flour and press into the pan. Bake for 16-18 minutes.
Combine lemon juice, zest, sugar, coconut milk, cornstarch, and turmeric; cook until thickened.
Pour filling over crust, bake for 15 minutes, then cool and chill for 1-2 hours.
Lift bars out, dust with powdered sugar, and cut into 16 squares.
Notes
Store leftovers in the refrigerator for up to 1 week or freeze for longer storage.
