Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1 1/2 cups almond milk ((or any plant-based milk))
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Add-ins

  • 1/2 cup vegan chocolate chips
  • 1/2 cup chopped hazelnuts
  • 1/4 cup coconut cream

Instructions 

  • Sift dry ingredients in a bowl. Whisk wet ingredients separately.
  • Combine wet and dry, fold in chocolate chips and hazelnuts.
  • Heat a greased skillet over medium heat. Pour 1/4 cup batter per pancake and cook until bubbles form, then flip and cook until golden.
  • Heat coconut cream, pour over chocolate chips, and stir until smooth to make ganache.
  • Stack pancakes, pour ganache on top, and serve warm.

Notes

For extra flavor, sprinkle with additional chopped hazelnuts or vegan chocolate chips before serving.
