Ingredients

Cake Batter

  • 2 ¼ cups all-purpose flour
  • 2 ¼ teaspoons baking powder
  • ¾ teaspoon salt
  • 3 large eggs (room temperature)
  • 1 ½ cups granulated sugar
  • 1 cup buttermilk or whole milk (room temperature)
  • ¾ cup unsalted butter (room temperature)
  • 1 ½ teaspoons vanilla extract

Frosting

  • 6 large egg whites
  • 1 ½ cups granulated sugar
  • 2 cups unsalted butter (room temperature)
  • 2 teaspoons vanilla extract

Decorations

Instructions 

  • Preheat oven to 350°F (175°C). Prepare two 8-inch pans with butter, flour, and parchment.
  • Mix flour, baking powder, and salt. Cream butter and sugar, then add eggs and vanilla. Alternate adding dry ingredients and milk. Divide batter into pans and bake for 30-35 minutes.
  • Make buttercream by heating egg whites and sugar over simmering water until 160°F, then whip until stiff peaks form. Incorporate butter and vanilla until smooth.
  • Assemble cake: layer with frosting, apply crumb coat, chill, then frost smoothly. Decorate with sprinkles and pipe rosettes.
