Ingredients

Protein

  • 8 ounces large shrimp peeled and deveined

Bread

  • 4 slices thick artisan bread

Cheese

  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded sharp cheddar cheese

Butter and Aromatics

  • 3 tablespoons unsalted butter softened
  • 3 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 0.5 teaspoon red pepper flakes
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions 

  • Season shrimp with salt and black pepper.
  • Melt 1 tbsp butter in a skillet and cook shrimp 2 mins per side until pink.
  • Add garlic and red pepper flakes; cook 1 min, then chop shrimp.
  • Mix remaining butter with parsley; spread on bread slices.
  • Assemble sandwiches with cheese, shrimp, and buttered bread; grill 3-4 mins per side until golden and melted.
