Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (spooned & leveled)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1.5 tsp ground cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp ground ginger
  • 0.5 tsp salt

Wet Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 1 cup vegetable oil
  • 4 large eggs (room temperature)
  • 2 tsp vanilla extract

Additional Ingredients

  • 3 cups finely grated carrots
  • 0.5 cup crushed pineapple (drained)
  • 0.5 cup chopped walnuts (optional)
  • 8 oz cream cheese (softened)
  • 0.5 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • pinch salt

Instructions 

  • Preheat oven to 350°F (175°C). Grease pans and line with parchment.
  • Whisk dry ingredients in a bowl. In another bowl, beat sugars, oil, eggs, and vanilla until smooth. Mix dry into wet, then fold in carrots, pineapple, and nuts.
  • Pour batter into pans and bake for 30-40 minutes. Cool in pans 15 minutes, then transfer to wire racks.
  • For frosting: Beat cream cheese and butter until smooth. Add powdered sugar, maple syrup, vanilla, and salt; whip until fluffy. Frost cooled cake.

Notes

Ensure cakes are completely cooled before frosting to prevent melting.
