A hearty and comforting turkey soup perfect for using leftover turkey and warming up your day.

Ingredients

Vegetables

  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • 2 ribs celery (diced)
  • 1 cup carrots (diced)
  • 3 cloves garlic (minced)

Flavorings

  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 8 cups chicken broth (or turkey broth/stock)
  • 3 cups leftover turkey (diced or shredded)
  • 1 cup bowtie pasta (uncooked)

Seasonings

  • 1 teaspoon dried basil
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • 1 teaspoon mustard powder
  • ¼ teaspoon ground sage
  • ¼ teaspoon black pepper

Instructions 

  • Sauté onion, celery, and carrots in butter for 5 minutes.
  • Add garlic, Worcestershire, hot sauce, bay leaf, and seasonings; cook for 1 minute.
  • Pour in broth, add turkey, and simmer for 15 minutes.
  • Cook pasta separately until al dente, then drain.
  • Serve soup ladled over pasta, garnished as desired.

Notes

For extra flavor, add a Parmesan rind or turkey bones during simmering.
