A comforting and hearty pot pie combining tender turkey, flavorful herbs, and creamy mashed sweet potatoes for a satisfying meal.

Ingredients

Sweet Potatoes

  • 1 pounds sweet potatoes (peeled and diced 1-inch)
  • kosher salt kosher salt (for boiling water)
  • 1/4 cup sour cream or full-fat plain yogurt (see notes for dairy-free)
  • 2 1/2 cups chopped cooked turkey breast (skin removed) (about 1 pound)
  • 1/2 tablespoon olive oil
  • 1 large shallot (chopped)
  • 2 tbsp chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh sage
  • 2 celery stalks chopped celery
  • 4 ounce frozen peas and carrots
  • 2 2/3 cups turkey or chicken broth
  • 1/4 teaspoon kosher salt
  • black pepper black pepper (to taste)
  • 2 tablespoons cornstarch

Instructions 

  • Boil sweet potatoes in salted water until tender, then mash with sour cream and set aside.
  • Preheat oven to 375°F (190°C). Sauté shallots, herbs, and celery in oil until soft.
  • Add turkey, frozen vegetables, broth, salt, and pepper; simmer 8-10 minutes. Thicken with cornstarch mixture and cook 3-4 minutes.
  • Transfer filling to a baking dish, top with mashed sweet potatoes, and bake for 20 minutes. Broil 2-3 minutes for color.

Notes

Use dairy-free yogurt if needed. Adjust seasoning to taste.
