A hearty and cheesy turkey casserole perfect for using leftovers and satisfying the whole family.
Ingredients
Pasta

dry pasta (Fusilli)

teaspoon
extra virgin olive oil

cup
diced carrots

onion
(peeled and diced)

cloves
garlic
(peeled and minced)

teaspoon
dried oregano

teaspoon
dried thyme

teaspoon
dried parsley

tomato paste

Half and Half

shredded turkey or leftovers
to taste

Instructions
Cook pasta in salted boiling water until al dente, then drain and rinse with cold water.
Sauté carrots and onion in olive oil until tender, then add garlic and herbs. Stir in tomato paste.
Add Half and Half and reserved pasta water, simmer briefly.
Mix in pasta and turkey, season with salt and pepper.
Layer half of the mixture in a baking dish, sprinkle with cheese, then add remaining pasta and cheese. Bake at 395°F (200°C) for 25 minutes.
Notes
Use leftover turkey for best flavor. Adjust seasoning to taste.
