A hearty and cheesy turkey casserole perfect for using leftovers and satisfying the whole family.

Ingredients

Pasta

  • 3 cups dry pasta (Fusilli)
  • 1 teaspoon extra virgin olive oil
  • 1 cup diced carrots
  • 1 small onion (peeled and diced)
  • 2 cloves garlic (peeled and minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 3 tablespoons tomato paste
  • 1 cup Half and Half
  • 2.25 cups shredded turkey or leftovers
  • to taste sea salt sea salt
  • to taste black pepper black pepper
  • 2 cups mozzarella cheese

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and rinse with cold water.
  • Sauté carrots and onion in olive oil until tender, then add garlic and herbs. Stir in tomato paste.
  • Add Half and Half and reserved pasta water, simmer briefly.
  • Mix in pasta and turkey, season with salt and pepper.
  • Layer half of the mixture in a baking dish, sprinkle with cheese, then add remaining pasta and cheese. Bake at 395°F (200°C) for 25 minutes.

Notes

Use leftover turkey for best flavor. Adjust seasoning to taste.
