Ingredients

Dough Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil or melted ghee
  • 1/2 teaspoon salt
  • 6 tablespoons water (more if needed)

Filling Ingredients

  • 2 large russet potatoes (peeled and diced)
  • 1/2 cup green peas (fresh or frozen)
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon grated ginger
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • to taste salt
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lemon juice
  • to fry amount vegetable oil (for deep frying)

Instructions 

  • Mix flour, salt, and oil until crumbly. Gradually add water and knead into a smooth dough. Let it rest for 30 minutes.
  • Boil potatoes until fork-tender, then drain and mash. Heat oil, add cumin seeds and ginger, sauté for 1 minute.
  • Add peas, potatoes, and spices. Stir well and cook for 3-4 minutes. Mix in cilantro and lemon juice, then let cool.
  • Divide dough, roll into ovals, cut in half. Form cones, fill with mixture, and seal edges.
  • Heat oil to 350°F (175°C). Fry samosas until golden and crisp. Drain on paper towels and serve warm.

Notes

Serve with chutney for an extra flavor boost!
