Instructions
Mix flour, salt, and oil until crumbly. Gradually add water and knead into a smooth dough. Let it rest for 30 minutes.
Boil potatoes until fork-tender, then drain and mash. Heat oil, add cumin seeds and ginger, sauté for 1 minute.
Add peas, potatoes, and spices. Stir well and cook for 3-4 minutes. Mix in cilantro and lemon juice, then let cool.
Divide dough, roll into ovals, cut in half. Form cones, fill with mixture, and seal edges.
Heat oil to 350°F (175°C). Fry samosas until golden and crisp. Drain on paper towels and serve warm.
