Ingredients

Dry Ingredients

  • 1.5 cups whole wheat flour
  • 0.25 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt

Wet Ingredients

  • 0.5 cup coconut oil
  • 0.5 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.75 cup unsweetened almond milk
  • 0.5 cup dark chocolate chips
  • 1 tablespoon ground flaxseed (optional)

Instructions 

  • Sift dry ingredients into a large bowl to combine.
  • Whisk melted coconut oil, honey or maple syrup, eggs, and vanilla until smooth.
  • Pour wet into dry ingredients and gently mix; do not overmix.
  • Add almond milk gradually, folding until batter is thick but scoopable.
  • Fold in chocolate chips, then spoon batter into muffin tins and bake at 350°F (175°C) for 18 minutes.
  • Cool muffins briefly before transferring to a wire rack. Enjoy!

Notes

For extra flavor, add a pinch of cinnamon or a handful of nuts.
