Instructions
Sift dry ingredients into a large bowl to combine.
Whisk melted coconut oil, honey or maple syrup, eggs, and vanilla until smooth.
Pour wet into dry ingredients and gently mix; do not overmix.
Add almond milk gradually, folding until batter is thick but scoopable.
Fold in chocolate chips, then spoon batter into muffin tins and bake at 350°F (175°C) for 18 minutes.
Cool muffins briefly before transferring to a wire rack. Enjoy!
