Instructions
Combine chicken, eggs, tapioca starch, spices, salt, and water. Marinate in fridge for 15-30 minutes.
Preheat 1 cup avocado oil in a skillet to 360°F.
Coat chicken in tapioca starch, then fry in hot oil until golden and internal temp reaches 165°F, about 4 minutes per batch.
Drain on wire rack and serve immediately with dipping sauces.
