Ingredients

Protein

  • 4 medium chicken breasts (rinsed, pat dry and sliced into 1” strips)
  • 2 eggs eggs
  • 1.5 cups tapioca starch (plus more as needed)
  • 2 teaspoons paprika
  • 2 teaspoons onion powder
  • 2 teaspoons kosher salt (plus more as needed)
  • 1 teaspoon smoked paprika
  • 1 teaspoon granulated garlic
  • 0.5 teaspoon cayenne pepper (plus more as desired)
  • 0.5 teaspoon black pepper (freshly cracked)
  • 2 tablespoons cold water
  • 1 cup avocado oil (plus more as needed)

Instructions 

  • Combine chicken, eggs, tapioca starch, spices, salt, and water. Marinate in fridge for 15-30 minutes.
  • Preheat 1 cup avocado oil in a skillet to 360°F.
  • Coat chicken in tapioca starch, then fry in hot oil until golden and internal temp reaches 165°F, about 4 minutes per batch.
  • Drain on wire rack and serve immediately with dipping sauces.

Notes

Ensure oil reaches proper temperature for crispy tenders.
