Ingredients

Meat

  • 1 pound Ground turkey (lean)
  • 2 medium Carrots, peeled and chopped
  • 2 cup Bell peppers (mix of red, yellow, orange), chopped
  • 1 medium Onion, finely diced
  • 2 cloves Garlic cloves, minced
  • 1 cup Green beans, trimmed and halved
  • 2 tablespoon Fresh rosemary, finely chopped
  • 1 teaspoon Thyme sprigs, whole or chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 1 tablespoon Olive oil (extra virgin)
  • 0.25 cup Chicken broth
  • 2 tablespoon Fresh parsley, chopped

Instructions 

  • Heat 1 tablespoon olive oil in a skillet over medium-high heat.
  • Sauté onion and carrots for 5 minutes until translucent and softened.
  • Add garlic, bell peppers, and green beans; cook for 3 minutes until bright and crisp-tender.
  • Push vegetables aside, add ground turkey, cook 6–8 minutes until browned and cooked through.
  • Sprinkle herbs, spices, salt, and pepper; stir to combine.
  • Pour chicken broth, cover, and simmer for 5 minutes until vegetables are tender.

Notes

Use fresh herbs for the best flavor and adjust seasoning to taste.
