Instructions
Season beef with salt and pepper, pat dry, then sear in batches in hot oil until golden. Remove and set aside.
Sauté onions, bell peppers, and poblano until translucent, then add jalapeno and garlic, cooking for 2 minutes.
Add tomatoes, beans, chilis, stock, spices, and bay leaf; return beef to the pot. Simmer covered for 2 hours until tender.
Remove bay leaf, stir in lime juice and cilantro, then adjust seasoning. Serve with optional toppings.
Notes
For extra flavor, let the chili rest for 30 minutes before serving to allow flavors to meld.
