Enjoy a flavorful and healthy twist on tacos with these stuffed peppers filled with seasoned turkey, beans, and rice, topped with melted cheese.
Ingredients

canned tomato sauce

Instructions
Preheat oven to 350°F (175°C) and prepare a greased 9x13 baking dish.
Heat olive oil in a sauté pan over medium-high heat for 3 minutes, then cook onions, garlic, and turkey for 10 minutes until browned.
Slice peppers in half, remove seeds, and place in baking dish.
Mix cooked turkey with tomato sauce, spices, beans, corn, and rice. Stuff peppers with about ¾ cup filling, top with cheese.
Bake uncovered for 15-20 minutes until cheese melts and peppers are tender.
