Enjoy a flavorful and healthy twist on tacos with these stuffed peppers filled with seasoned turkey, beans, and rice, topped with melted cheese.

Ingredients

Vegetables and Oils

  • 1 tablespoon olive oil
  • 0.5 cup diced onion
  • 1 tablespoon minced garlic

Meat and Protein

  • 1 lb ground turkey (or ground beef)

Vegetables

  • 4 large bell peppers (halved, red, orange or yellow)
  • 1 cup canned tomato sauce
  • 1 tablespoon taco seasoning
  • 1 cup black beans
  • 1 cup frozen corn
  • 1 cup cooked white rice (or brown rice)
  • 1 cup shredded cheddar cheese

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a greased 9x13 baking dish.
  • Heat olive oil in a sauté pan over medium-high heat for 3 minutes, then cook onions, garlic, and turkey for 10 minutes until browned.
  • Slice peppers in half, remove seeds, and place in baking dish.
  • Mix cooked turkey with tomato sauce, spices, beans, corn, and rice. Stuff peppers with about ¾ cup filling, top with cheese.
  • Bake uncovered for 15-20 minutes until cheese melts and peppers are tender.
