A flavorful and hearty dish combining seasoned ground beef, rice, and creamy queso for a satisfying meal.

Ingredients

Meat and Seasonings

  • 1 pound lean ground beef
  • 1 diced onion
  • Salt & pepper Salt & pepper (to taste)

Liquids and Spices

  • 4 cups chicken broth
  • 1/4 cup taco sauce or tomato sauce
  • 1 packet taco seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon oregano

Main

  • 1 1/2 cups uncooked white rice
  • 8 ounces Velveeta Queso Blanco cheese
  • 3-5 tablespoons half & half (for queso sauce)

Instructions 

  • Add ground beef and onion to a skillet, season with salt and pepper, cook until meat is done. Reduce heat.
  • Add chicken broth, taco sauce, taco seasoning, garlic powder, and oregano. Bring to a boil.
  • Stir in rice, boil, then reduce heat, cover, and simmer for 25 minutes, stirring occasionally.
  • Prepare queso sauce by melting Velveeta with half & half until smooth, adding more half & half as needed.
  • Serve rice mixture drizzled with queso, garnished with cilantro if desired.

Notes

For extra flavor, top with fresh cilantro or diced tomatoes.
