A quick and flavorful one-pan taco pasta combining ground beef, vegetables, and cheesy goodness for a satisfying meal.

Ingredients

Meat and Vegetables

  • 1 lb ButcherBox Ground Beef
  • 1/2 cup onion (chopped finely)
  • ½ tablespoon minced garlic (2 cloves)
  • 2 cups red bell pepper (diced)
  • 2 tablespoons taco seasoning (low sodium)

Pasta

  • 3 cups medium shells pasta (10 oz)
  • 1 tablespoon tomato paste
  • 2 cups beef broth
  • 2 cups water
  • 1 cup shredded cheddar cheese

Instructions 

  • Heat a large pan with olive oil spray over medium-high heat for 3 minutes.
  • Add ground beef, onion, garlic, and bell peppers. Cook for 10 minutes until beef is cooked through.
  • Add pasta, taco seasoning, tomato paste, broth, and water. Bring to a boil, then cover and cook for 5 minutes.
  • Remove cover, reduce heat, and simmer for 10-12 minutes until pasta is tender and liquid reduces.
  • Stir in shredded cheese until melted. Serve hot.

Notes

For a spicier flavor, add some hot sauce or jalapeños.
