A spicy and crispy stir-fry featuring julienned potatoes infused with Szechuan flavors, perfect for a quick and flavorful meal.

Instructions
Soak julienned potatoes in cold water for 20 minutes, then dry thoroughly.
Heat 3 tbsp vegetable oil in a pan, add potatoes, and stir-fry until golden, about 7-8 mins.
Add red chilli flakes, crushed Szechuan peppercorns, and garlic; stir-fry until fragrant.
Mix in spring onions, soy sauce, and salt; cook for 2 more minutes.
Turn off heat and garnish with toasted sesame seeds before serving.

Ensure potatoes are thoroughly dried for maximum crispiness.
