A spicy and crispy stir-fry featuring julienned potatoes infused with Szechuan flavors, perfect for a quick and flavorful meal.

Ingredients

Vegetables

  • 3 large potato (julienned)
  • 1.5 tsp red chilli flakes
  • 1 tsp Szechuan peppercorns (slightly crushed)
  • 6 cloves garlic (finely chopped)
  • 2 spring onions spring onions (finely chopped)
  • to taste salt
  • 1 tbs soy sauce
  • for garnish toasted white sesame seeds
  • 3 tbs vegetable oil for frying

Instructions 

  • Soak julienned potatoes in cold water for 20 minutes, then dry thoroughly.
  • Heat 3 tbsp vegetable oil in a pan, add potatoes, and stir-fry until golden, about 7-8 mins.
  • Add red chilli flakes, crushed Szechuan peppercorns, and garlic; stir-fry until fragrant.
  • Mix in spring onions, soy sauce, and salt; cook for 2 more minutes.
  • Turn off heat and garnish with toasted sesame seeds before serving.

Notes

Ensure potatoes are thoroughly dried for maximum crispiness.
