Ingredients

Oil

  • 3 tablespoons olive oil

Vegetables

  • 1 large onion (chopped)
  • 1 large carrot (chopped)
  • 1 stalk celery (chopped)
  • 4 cloves garlic (grated)
  • 1.5 teaspoons cumin
  • 1 large green bell pepper (diced)
  • 1.5 pounds sweet potatoes (peeled and cut into 1 inch (2.5cm) dice)
  • 3 cans diced tomatoes (15-ounce each)
  • 3 cans kidney beans (15-ounce each, drained)
  • 2 cups vegetable broth
  • 1 teaspoon chili powder (more or less to taste)
  • 1 teaspoon chipotle powder (or smoked paprika (optional for smoky flavor))
  • 1.5 teaspoons salt (or more to taste)
  • 1/8 teaspoon black pepper

Toppings and sides

  • 4-6 portions rice, pasta, or quinoa
  • 4-6 wedges lime (for serving)

Instructions 

  • Heat olive oil in a large pot, sauté chopped onion, carrot, and celery for 5 minutes. Add garlic, bell pepper, cumin, and cook for 2 minutes.
  • Add chopped sweet potatoes, diced tomatoes, kidney beans, vegetable broth, chili powder, chipotle powder, salt, and black pepper. Stir well.
  • Simmer uncovered for 30-40 minutes until sweet potatoes are tender and sauce thickens. Adjust seasonings as needed.
  • Serve hot over rice, pasta, or quinoa, topped with lime wedges and optional garnishes like cilantro or sour cream.
