Enjoy these flavorful stuffed peppers filled with seasoned ground meat, rice, and cheese, baked to perfection.

Ingredients

Bell Peppers

  • 6 large bell peppers (red, yellow, or green)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 can (15 oz) diced tomatoes, drained
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • 2 cups tomato sauce

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut off pepper tops, remove seeds and membranes. Cook meat with onion and garlic until browned.
  • Mix cooked rice, tomatoes, seasoning, salt, and pepper into the meat. Stuff peppers with the mixture.
  • Place peppers in a baking dish, pour tomato sauce around, cover with foil, and bake 35–40 minutes.
  • Uncover, top with cheese, and bake 10–15 minutes until bubbly. Rest 5 minutes before serving.

Notes

For a vegetarian version, substitute the meat with beans or vegetables.
