Enjoy these flavorful stuffed peppers filled with seasoned ground meat, rice, and cheese, baked to perfection.
Ingredients
Bell Peppers

large
bell peppers (red, yellow, or green)
1
lb
ground beef or turkey
1
cup
cooked rice (white or brown)
1
small
onion (finely chopped)
2
cloves
garlic (minced)

can (15 oz)
diced tomatoes, drained
1
cup
shredded mozzarella or cheddar cheese
1
tsp
Italian seasoning
to taste
Salt and pepper

tomato sauce
Instructions
Preheat oven to 375°F (190°C).
Cut off pepper tops, remove seeds and membranes. Cook meat with onion and garlic until browned.
Mix cooked rice, tomatoes, seasoning, salt, and pepper into the meat. Stuff peppers with the mixture.
Place peppers in a baking dish, pour tomato sauce around, cover with foil, and bake 35–40 minutes.
Uncover, top with cheese, and bake 10–15 minutes until bubbly. Rest 5 minutes before serving.
Notes
For a vegetarian version, substitute the meat with beans or vegetables.
