A delightful and moist sheet cake featuring fresh strawberries and a luscious vanilla frosting, perfect for any celebration or casual gathering.

Ingredients

Cake ingredients

  • 2 1/2 cups cake flour
  • 1 1/2 tsp aluminum-free baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 1/4 cups granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs, at room temperature
  • 1 cup low-fat buttermilk, at room temperature
  • 1/2 cup plain fat-free Greek yogurt, at room temperature
  • 1 cup fresh sliced strawberries

Frosting ingredients

  • 3/4 cup unsalted butter, at room temperature (for frosting)
  • 4 oz cream cheese, at cool room temperature
  • 1/2 tsp salt (for frosting)
  • 1 1/2 tsp vanilla extract (for frosting)
  • 3 cups powdered sugar
  • 2 cups fresh sliced strawberries (for topping)

Instructions 

  • Preheat oven to 350°F (175°C). Prepare a 13x9 inch pan with nonstick spray and parchment paper.
  • Mix dry ingredients. Beat butter and sugar until fluffy, add vanilla and eggs. Alternate adding dry ingredients and buttermilk mixture to batter.
  • Pour batter into pan, smooth, top with sliced strawberries, and bake for 25-28 minutes. Cool completely.
  • Make frosting by beating butter, cream cheese, salt, vanilla, and powdered sugar until smooth and fluffy.
  • Spread frosting over cooled cake, chill for 20 minutes, then top with fresh strawberries before serving.

Notes

For best results, use fresh strawberries and ensure all ingredients are at room temperature.
