A delightful layered dessert combining fresh strawberries, fluffy cake, and creamy topping in individual cups.

Ingredients

Cake

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup unsalted butter, softened
  • ½ cup whole milk
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • cups heavy whipping cream, cold
  • ½ cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 tsp pure vanilla extract

Strawberries

  • 2 cups fresh strawberries, sliced
  • 2 Tbsp granulated sugar
  • 1 lemon juiced

Garnish

  • fresh mint leaves
  • fresh strawberries, sliced

Instructions 

  • Prepare strawberries: rinse, hull, slice, toss with sugar and lemon juice, and let sit for 20 minutes.
  • Bake cake: mix dry ingredients, combine with wet ingredients, pour into pan, and bake at 350°F for 18-22 minutes. Cool and cut into cubes.
  • Make cream: beat cream cheese, powdered sugar, vanilla until smooth; stream in heavy cream and beat to medium peaks.
  • Assemble cups: layer cake cubes, strawberries with syrup, and cream in each cup. Repeat layers and top with a strawberry slice and mint leaf.
  • Chill for 30 minutes before serving to meld flavors.

Notes

For best results, use fresh strawberries and chill the assembled cups before serving.
