Instructions
Preheat oven to 375°F (190°C). Line an 8x8-inch pan with parchment.
Mix oats, flour, sugars, baking soda, and salt. Cut in cold butter until crumbly.
Reserve 1 cup of crumble; press remaining into pan. Bake for 10–12 minutes.
Cook strawberries, sugar, and lemon juice until thickened. Mix cornstarch with water and add to filling.
Spread filling over crust, sprinkle reserved crumble, and bake 20–25 minutes. Cool before slicing.
Notes
For best results, use fresh strawberries and ensure butter is cold for crumbly topping.
