Delicious and healthy oatmeal bars packed with fresh strawberries and bananas, perfect for a quick snack or breakfast.

Ingredients

Dried ingredients

  • 2 cups rolled oats (gluten-free if needed)
  • 1/2 cup peanut butter (can substitute with other nut or seed butter)
  • 2 large bananas (mashed)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup strawberries (chopped)

Instructions 

  • Preheat oven to 180°C/350°F. Line an 8x8-inch pan with parchment.
  • Mix oats, mashed bananas, peanut butter, and vanilla until combined. Fold in strawberries.
  • Spread batter evenly in the pan. Top with extra strawberries if desired.
  • Bake for 20-25 minutes until golden and a skewer comes out clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Store in an airtight container for up to 3 days.
