A light and creamy strawberry mousse made with fresh strawberries, Greek yogurt, and whipped cream, perfect for a refreshing dessert.

Ingredients

Fruits

  • 8 ounces strawberries hulled
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon water
  • 2 teaspoons gelatin
  • 1 cup full-fat greek yogurt
  • ½ cup sugar
  • 1 cup whipping cream

Instructions 

  • Cook strawberries, sugar, lemon juice, and vanilla over medium heat for 10-12 minutes, stirring occasionally.
  • Puree the softened strawberries with an immersion blender and remove from heat.
  • Bloom gelatin in water for 2 minutes, then whisk into the warm strawberry purée until combined.
  • Beat Greek yogurt and sugar on medium speed for 2 minutes, then slowly add whipped cream and mix until thickened.
  • Fold cooled strawberry purée into the yogurt and cream mixture, then pour into cups and chill for 6 hours.

Notes

For a richer flavor, top with additional whipped cream before serving.
