A light and creamy strawberry mousse made with fresh strawberries, Greek yogurt, and whipped cream, perfect for a refreshing dessert.

full-fat greek yogurt

Instructions
Cook strawberries, sugar, lemon juice, and vanilla over medium heat for 10-12 minutes, stirring occasionally.
Puree the softened strawberries with an immersion blender and remove from heat.
Bloom gelatin in water for 2 minutes, then whisk into the warm strawberry purée until combined.
Beat Greek yogurt and sugar on medium speed for 2 minutes, then slowly add whipped cream and mix until thickened.
Fold cooled strawberry purée into the yogurt and cream mixture, then pour into cups and chill for 6 hours.
Notes
For a richer flavor, top with additional whipped cream before serving.
