Delight in these luscious strawberry cheesecake cookies, combining creamy filling with fruity jam and tender cookie dough for a perfect treat.

Ingredients

Filling

  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 12 oz fresh strawberries, hulled and finely diced
  • 1/4 cup granulated white sugar

Cookie Dough

  • 2 3/4 cups all purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated white sugar
  • 1 cup unsalted butter, very softened
  • 1 egg at room temperature
  • 2 tsp vanilla
  • 1/4 cup granulated white sugar, for rolling dough in

Instructions 

  • Prepare strawberry jam by cooking diced strawberries with sugar until thickened, about 45 minutes. Chill in refrigerator.
  • Mix cream cheese, sugar, and vanilla until fluffy. Scoop into 18 portions and freeze.
  • Preheat oven to 350℉ (175℃). Whisk dry ingredients. Beat butter and sugar until fluffy, then add egg and vanilla. Combine dry with wet ingredients.
  • Layer dough with jam, fold to create pockets, then portion into 18 balls. Encase frozen cheesecake discs, shape, and roll in sugar.
  • Bake cookies at 350℉ (175℃) for 11–12 minutes. Cool on sheet 10 minutes, then transfer to rack to cool completely.

Notes

Ensure dough is slightly flattened for even baking and sealing around the cheesecake discs.
