Instructions
Prepare strawberry jam by cooking diced strawberries with sugar until thickened, about 45 minutes. Chill in refrigerator.
Mix cream cheese, sugar, and vanilla until fluffy. Scoop into 18 portions and freeze.
Preheat oven to 350℉ (175℃). Whisk dry ingredients. Beat butter and sugar until fluffy, then add egg and vanilla. Combine dry with wet ingredients.
Layer dough with jam, fold to create pockets, then portion into 18 balls. Encase frozen cheesecake discs, shape, and roll in sugar.
Bake cookies at 350℉ (175℃) for 11–12 minutes. Cool on sheet 10 minutes, then transfer to rack to cool completely.
Notes
Ensure dough is slightly flattened for even baking and sealing around the cheesecake discs.
