A creamy and cheesy squash casserole that's perfect as a comforting side dish or main course.

Ingredients

Vegetables

  • 2-3 medium yellow squash (sliced into 1/4 inch slices)
  • 3 tbsp butter (unsalted)
  • 1 medium onion (sliced)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup low sodium beef broth (or water)
  • 1 cup mozzarella cheese (shredded)
  • ½ cup parmesan cheese (grated)
  • ½ tsp salt (or more to taste)
  • ½ tbsp pepper (or more to taste)
  • 1 tsp paprika
  • 2 tsp cornstarch (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and grease an 8x8-inch dish.
  • Slice squash into 1/4-inch rounds. Cook onions and garlic in butter for 4-5 minutes.
  • Mix heavy cream, broth, and cornstarch; cook until thickened. Add Parmesan, season with salt, pepper, and paprika.
  • Arrange squash slices in dish, pour sauce over, and top with mozzarella.
  • Bake for 25 minutes until tender and golden. Rest briefly before serving.

Notes

For a richer flavor, add a pinch of nutmeg or fresh herbs.
