A creamy and flavorful pasta dish combining sautéed mushrooms, wilted spinach, and Parmesan cheese for a satisfying meal.

Ingredients

Main ingredients

  • 2 tablespoons extra-virgin olive oil
  • 6 cloves garlic (minced)
  • 1 pound Cremini mushrooms (cleaned and sliced)
  • 2.25 cups half-and-half (or single cream outside the US)
  • 1 pound pasta (choose your favorite type)
  • 8 oz spinach
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons flat-leaf parsley (chopped)
  • to taste Salt and pepper

Instructions 

  • Cook pasta in boiling salted water until just under al dente, then drain and reserve half a cup of water.
  • Heat olive oil, sauté garlic until fragrant, then add mushrooms, season with salt and pepper, cook until golden.
  • Add spinach, cook until wilted, then pour in half-and-half and simmer until slightly thickened.
  • Combine pasta with sauce, add parsley and Parmesan, toss well, then add reserved pasta water to adjust consistency.
  • Season with salt and pepper, serve immediately with optional salad and bread.

Notes

Use fresh spinach for best flavor and texture.
