  • 1 pound breakfast sausage

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • chopped green onions for garnish

Instructions 

  • Cook sausage in a skillet until browned; drain fat.
  • Whisk eggs with salt and pepper, then scramble with sausage.
  • Stir in half the cheese until melted; roll mixture in tortillas.
  • Make gravy with drippings, flour, and milk; season.
  • Pour gravy over enchiladas, top with remaining cheese, and bake.
  • Garnish with green onions before serving.
