Ingredients

  • 120 g pumpkin purée
  • 113 g unsalted butter, softened
  • 100 g granulated sugar (plus extra for coating)
  • 100 g brown sugar, packed
  • 1 large egg yolk
  • 5 ml vanilla extract
  • 220 g all-purpose flour
  • 2 g baking soda
  • 2 g pumpkin pie spice
  • 1 g ground cinnamon (plus extra for coating)
  • 1 g salt

Instructions 

  • Mix sugar and cinnamon for coating; set aside.
  • Cream butter, granulated sugar, and brown sugar until fluffy.
  • Add pumpkin purée, egg yolk, and vanilla; beat until smooth.
  • Whisk together flour, baking soda, spices, and salt; mix into wet ingredients.
  • Refrigerate dough for 30 minutes, then scoop and coat in cinnamon-sugar.
  • Bake at 350°F for 9–11 minutes; cool before serving.

Notes

For extra flavor, add chopped nuts or chocolate chips to the dough.
