Instructions
Mix sugar and cinnamon for coating; set aside.
Cream butter, granulated sugar, and brown sugar until fluffy.
Add pumpkin purée, egg yolk, and vanilla; beat until smooth.
Whisk together flour, baking soda, spices, and salt; mix into wet ingredients.
Refrigerate dough for 30 minutes, then scoop and coat in cinnamon-sugar.
Bake at 350°F for 9–11 minutes; cool before serving.
