Instructions
Cook ground beef in olive oil until browned, then drain.
Sauté onion and garlic until fragrant and translucent.
Transfer beef, onion, and garlic to slow cooker; add carrots, potatoes, tomatoes, broth, and spices. Stir.
Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
Stir in spinach during last 10 minutes; season to taste and serve hot.
Notes
For added flavor, top with fresh herbs or a squeeze of lemon before serving.
