Ingredients

Meat

  • 1 pound ground beef

Vegetables

  • 4 large carrots
  • 1 medium onion
  • 3 cloves garlic (minced)
  • 1 cup diced tomatoes
  • 1 cup potatoes (diced)

Spices and Broth

  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt (adjust to taste)

Oils

  • 2 tablespoons olive oil

Additional

  • 2 cups fresh spinach

Instructions 

  • Cook ground beef in olive oil until browned, then drain.
  • Sauté onion and garlic until fragrant and translucent.
  • Transfer beef, onion, and garlic to slow cooker; add carrots, potatoes, tomatoes, broth, and spices. Stir.
  • Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  • Stir in spinach during last 10 minutes; season to taste and serve hot.

Notes

For added flavor, top with fresh herbs or a squeeze of lemon before serving.
