Ingredients

Meat

  • 2.5 lbs beef chuck roast (cut into large chunks)
  • 2 tbsp olive oil (for searing, optional)

Dairy

  • 6 tbsp unsalted butter (melted)
  • 5 cloves garlic (minced)
  • 1 tsp dried Italian herbs (or thyme, oregano, basil)
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley (chopped, plus more for garnish)

Vegetables

  • 2 lbs baby Yukon Gold potatoes (halved)
  • 1/2 cup low-sodium beef broth
  • 1 medium onion (sliced, optional)
  • 1 cup carrots (chopped, optional)

Instructions 

  • Pat beef chunks dry, season with salt and black pepper. Sear in a skillet with olive oil until browned, about 2-3 minutes per side.
  • Place halved potatoes in the slow cooker, add seared beef, onion, and carrots if using.
  • Melt butter, stir in garlic, herbs, red pepper flakes, and parsley to make garlic butter sauce.
  • Pour beef broth over ingredients, drizzle with garlic butter, then cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours.
  • Adjust seasoning, thicken sauce if needed, then serve beef and potatoes garnished with fresh parsley.

Notes

For extra flavor, let the sauce sit uncovered for 15 minutes or mash some potatoes into the broth to thicken.
