A flavorful one-pan dish combining tender chicken, fragrant garlic, and perfectly cooked rice for a satisfying meal.

chicken tenderloins or thin chicken breasts

chicken broth or stock (divided)
Vegetables & Aromatics

onion (diced fine, about 1 cup)

garlic powder (divided)

Instructions
Heat olive oil in a skillet, cook onion with 1/2 tsp salt until translucent (~5-6 min).
Add garlic, cook 1-2 min; then add rice and toast for 2 min.
Season chicken with garlic powder, salt, paprika, onion powder, and pepper; set aside.
Nest chicken in rice, add 3 cups broth, bring to boil, cover, and simmer 20 min.
Stir, add remaining broth, seasonings, cover, and cook 10-15 min until rice is tender.
Rest 5 min, garnish with parsley if desired, then serve.
Notes
Resist lifting the lid during cooking to keep steam trapped for perfect rice.
