A creamy, cheesy shrimp pasta casserole baked to perfection, combining garlic, Parmesan, and mozzarella for a comforting meal.

Ingredients

Pasta

  • 16 ounces penne pasta

Dairy & Oils

  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup grated Parmesan cheese
  • ¼ cup shredded mozzarella cheese (divided)

Seafood

  • 1 pound uncooked shrimp (peeled, deveined, tails removed)

Instructions 

  • Cook pasta until al dente, drain and set aside.
  • Cook shrimp with garlic and parsley in butter and olive oil until pink, then remove and set aside.
  • Make cheese sauce by whisking flour into melted butter, then gradually adding broth and milk, stirring until thickened. Add lemon juice, salt, pepper, Parmesan, and mozzarella, stirring until melted.
  • Mix ¾ of the shrimp and pasta into the sauce, then transfer to a baking dish. Top with remaining shrimp and mozzarella cheese.
  • Bake at 350°F (175°C) for 10 minutes until cheese is bubbly and lightly browned. Serve hot.

Notes

For a richer flavor, use freshly grated Parmesan and mozzarella.
