Instructions
Preheat oven to 425°F (220°C). Grease a sheet pan and soak skewers in water.
Pat chicken dry, cut into 2-inch pieces, and toss with oil, garlic, salt, oregano, mustard, honey, and lemon zest.
Skewer chicken pieces tightly, place on pan, and bake for 20 minutes, flipping halfway.
Mix tzatziki ingredients in a bowl. Warm pita or naan in the last minutes of baking.
Spread tzatziki on pita, add lettuce, chicken, and toppings. Serve immediately.
Notes
For best results, marinate the chicken for at least 30 minutes before baking.
