Enjoy flavorful Greek-inspired chicken gyros made easy on a sheet pan, topped with fresh toppings and served with creamy tzatziki.

Ingredients

Chicken

  • 2 lbs boneless skinless chicken thighs (cut into 2-inch pieces)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 2 teaspoons kosher salt
  • 2 teaspoons dried oregano
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Zest of 1 lemon lemon zest

Pitas and toppings

  • 5 pieces fresh pitas or naan (warmed)

Toppings

  • to taste Feta cheese, sliced tomato, pickled red onion, shredded romaine lettuce, fresh dill
  • 1 English cucumber shredded and pressed dry
  • 1.5 cups full fat plain Greek yogurt
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • 1 clove garlic (minced)
  • to taste Kosher salt

Instructions 

  • Preheat oven to 425°F (220°C). Grease a sheet pan and soak skewers in water.
  • Pat chicken dry, cut into 2-inch pieces, and toss with oil, garlic, salt, oregano, mustard, honey, and lemon zest.
  • Skewer chicken pieces tightly, place on pan, and bake for 20 minutes, flipping halfway.
  • Mix tzatziki ingredients in a bowl. Warm pita or naan in the last minutes of baking.
  • Spread tzatziki on pita, add lettuce, chicken, and toppings. Serve immediately.

Notes

For best results, marinate the chicken for at least 30 minutes before baking.
