Ingredients

Dough

  • 2 cups flour (self-raising) (see notes)
  • 2 large Egg
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • pinch nutmeg
  • 1 ¾ cups milk (see notes)
  • 2 tablespoons sugar
  • 4 spring onions spring onions (finely chopped)
  • 3 tablespoons unsalted butter (melted)
  • 400 g frozen breaded chicken (Use any frozen breaded chicken you prefer)
  • 4 tablespoons honey
  • 100 g butter
  • 2 tablespoons cilantro (coriander) (finely chopped)

Instructions 

  • Mix flour, baking powder, baking soda, nutmeg, and sugar in a bowl.
  • Add eggs, milk, spring onions, and melted butter; whisk until smooth.
  • Cook pancakes on a hot griddle until golden brown; set aside.
  • Cook frozen breaded chicken according to package instructions; then toss with honey and melted butter.
  • Top pancakes with honey butter chicken and sprinkle with cilantro; serve hot.

Notes

For extra flavor, add a dash of pepper or your favorite herbs to the batter.
