Ingredients

Dough

  • 1.5 cups gluten-free flour (or 1¾-2 cups cornstarch)
  • 0.75 tsp kosher salt
  • 0.33 cup full-fat plain yogurt
  • 3 Tbsp extra-virgin olive oil
  • 1 Tbsp brown sugar

Filling

  • 2 onions onions (sliced into half-moons)
  • 1 Tbsp butter
  • 1 can pumpkin puree (375 ml)
  • 0.25 cup creme fraiche or Greek yogurt (optional)
  • to taste flaky sea salt
  • to taste coarse black pepper
  • 1 egg whisked egg (for egg wash)
  • 1 teaspoon water
  • 2 Tbsp sliced almonds

Instructions 

  • Whisk together flour and salt; then add yogurt and oil, mixing into a rough dough. Chill for 2 hours.
  • Caramelize onions: cook sliced onions in butter over medium heat, add brown sugar, and cook until golden, about 25 minutes.
  • Mix pumpkin with caramelized onions, season with salt and pepper, and optional yogurt or creme fraiche.
  • Preheat oven to 400°F (200°C). Roll dough into a 12-inch circle on parchment, add filling, fold edges, brush with egg wash, sprinkle almonds, and chill for 10 minutes.
  • Bake for 40-50 minutes until crust is golden. Cool slightly before serving.

Notes

Chill the dough thoroughly for best results and ensure caramelized onions are cooked slowly for deep flavor.
