Ingredients

Bread

  • 6 slices thick slices of sturdy bread (such as brioche, challah, sourdough, or thick-cut white bread)

Eggs

  • 3 large eggs (provide structure and richness)

Milk or Cream

  • 120 ml whole milk, half-and-half, or heavy cream (thins the eggs for custard)

Cheese

  • 50 g grated hard or semi-hard cheese (such as parmesan, gruyère, or sharp cheddar)

Fresh Herbs

  • 2 tablespoons finely chopped fresh herbs (such as chives, parsley, or thyme)

Seasonings

  • 0.5 teaspoon salt (adjust to taste)
  • 0.25 teaspoon black pepper (freshly ground)
  • 2 tablespoons unsalted butter or olive oil (for cooking)

Instructions 

  • Lightly toast the bread if not stale, then set aside.
  • Whisk eggs in a shallow dish until combined, then add milk and other ingredients.
  • Soak each slice of bread in the custard mixture for 20-30 seconds per side.
  • Cook soaked bread in a skillet over medium heat for 3-5 minutes per side until golden brown.
  • Keep cooked toast warm in a low oven if cooking in batches.
  • Serve warm and enjoy!

Notes

For best results, use slightly stale bread to enhance absorption of the custard.
