A delicious and refreshing salmon salad served in toasted bread with fresh dill and crisp vegetables, perfect for a quick lunch.

Ingredients

  • 14.75 oz canned salmon, drained and flaked
  • 0.5 cup mayonnaise
  • 3 tbsp fresh dill, finely chopped
  • 0.25 cup celery, finely diced
  • 2 tbsp red onion, minced
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tsp Dijon mustard
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 8 slices toasted sourdough, rye, or multigrain bread
  • 4 leaves butter lettuce or arugula
  • 4 slices cucumber, thinly sliced

Instructions 

  • Drain and flake the salmon, removing bones if desired.
  • Mix mayonnaise, lemon juice, mustard, onion, and celery with the salmon.
  • Stir in dill, then season with salt and pepper.
  • Toast the bread slices until golden.
  • Assemble sandwiches with lettuce, salmon salad, cucumber, and top with bread.

Notes

For extra flavor, add a squeeze of lemon before serving.
