A delicious and healthy salmon salad served in toasted croissants, perfect for a quick lunch or light dinner.

Ingredients

Protein

  • 1.5 lbs fresh salmon
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 1/4 cup red onion, (finely diced)
  • 1 red pepper, (finely diced) red pepper
  • 1/3 cup celery, (finely diced)
  • 2 tablespoons fresh dill, (minced)
  • 8 croissants croissants, (sliced in half and lightly toasted)
  • 2 tablespoons Greek yogurt, (or mayonnaise)
  • 1.5 tablespoons dijon mustard
  • 1 clove garlic, (grated)
  • 2 tablespoons lemon juice
  • to taste salt and pepper

Instructions 

  • Preheat oven to 400℉. Season salmon with salt and pepper, then bake for 15-20 minutes until cooked through. Cool slightly, then shred with forks.
  • Mix Greek yogurt, dijon mustard, grated garlic, lemon juice, salt, and pepper to make the dressing.
  • Combine shredded salmon, diced red onion, red pepper, celery, dill, and dressing in a bowl.
  • Spread about 1/4 cup of the salmon salad on each toasted croissant half, then top with the remaining half.

Notes

For best flavor, use fresh dill and high-quality salmon.
