12ouncesdried penne
3tablespoonsbutter
2clovesgarlic (minced)
1.5cupsheavy cream
1cupParmesan cheese (freshly grated)
to tastesalt and pepper
8ouncessmoked salmon (cut into thin strips)
2-3sprigsfresh thyme
Instructions
Cook the pasta in salted boiling water until al dente, then drain and reserve ½ cup of water.
Melt butter in a skillet, sauté garlic for 30 seconds, then add cream and reserved pasta water. Simmer and stir in Parmesan, salt, and pepper until smooth.
Add cooked pasta and smoked salmon to the sauce, tossing to combine and heat through.
Garnish with fresh thyme and serve immediately with extra Parmesan if desired.
Notes
For a lighter version, use half-and-half instead of heavy cream.
