A quick and creamy chicken salad perfect for sandwiches or salads, using shredded rotisserie chicken and fresh veggies.

Ingredients

  • 6 cups shredded rotisserie chicken or leftover cooked chicken breast
  • 0.5 cup diced celery
  • 0.33 cup diced red onion
  • 0.25 cup pickle relish
  • 0.25 cup plain Greek yogurt
  • 0.33 cup mayo
  • 2 tablespoons pickle juice
  • 1 tablespoon Dijon mustard
  • to taste Salt and pepper

Instructions 

  • Pulse the chicken in a food processor to shred, then transfer to a large bowl.
  • Add diced celery and red onion to the bowl, then mix in relish, Greek yogurt, mayo, mustard, pickle juice, salt, and pepper.
  • Toss everything until well combined and creamy.
  • Serve immediately or chill before serving.

Notes

For extra flavor, add fresh herbs like dill or parsley.
