  • 1 piece bone-in turkey breast (4-6 pounds)
  • 0.5 cup unsalted butter, softened (1 stick)
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh rosemary (finely chopped)
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon fresh sage (finely chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 piece lemon (zest, optional) (for citrusy kick)

Instructions 

  • If frozen, thaw the turkey in the refrigerator for 24 hours per 4-5 pounds.
  • Preheat oven to 375°F (190°C). Mix softened butter with garlic, herbs, salt, pepper, and lemon zest.
  • Pat dry the turkey, loosen skin, and spread 2/3 of herb butter under the skin. Rub remaining butter over the outside.
  • Tie the turkey with kitchen twine if desired, place in a roasting pan, and roast for about 20 minutes per pound until internal temperature reaches 165°F (74°C).
  • Baste every 30 minutes, then rest for 15-20 minutes before carving and serving.
