Chicken
1.5poundsboneless skinless chicken breasts, cut into 1.5-inch pieces
2tablespoonsolive oil
1tablespoondry ranch seasoning mix
1teaspoonpaprika
1teaspoongarlic powder
0.5teaspoonsalt
0.25teaspoonblack pepper
4tablespoonsunsalted butter
3clovesgarlic (minced)
1.5teaspoonsdry ranch seasoning
0.33cupgrated Parmesan cheese (freshly grated for best flavor)
2tablespoonsfresh parsley (or dill chopped)
1tspchili flakes
2teaspoonslemon juice (optional)
Instructions
Whisk together olive oil, ranch seasoning, paprika, garlic powder, salt, and pepper. Toss chicken pieces to coat and refrigerate for 30 minutes to 8 hours.
If using wooden skewers, soak in water for 20–30 minutes. Thread chicken onto skewers, leaving space between pieces.
Melt butter, cook garlic for 1–2 minutes, then stir in ranch seasoning and Parmesan. Use as a sauce or brush onto cooked skewers.
