Ingredients

Chicken

  • 1.5 pounds boneless skinless chicken breasts, cut into 1.5-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon dry ranch seasoning mix
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 3 cloves garlic (minced)
  • 1.5 teaspoons dry ranch seasoning
  • 0.33 cup grated Parmesan cheese (freshly grated for best flavor)
  • 2 tablespoons fresh parsley (or dill chopped)
  • 1 tsp chili flakes
  • 2 teaspoons lemon juice (optional)

Instructions 

  • Whisk together olive oil, ranch seasoning, paprika, garlic powder, salt, and pepper. Toss chicken pieces to coat and refrigerate for 30 minutes to 8 hours.
  • If using wooden skewers, soak in water for 20–30 minutes. Thread chicken onto skewers, leaving space between pieces.
  • Melt butter, cook garlic for 1–2 minutes, then stir in ranch seasoning and Parmesan. Use as a sauce or brush onto cooked skewers.

Notes

For extra flavor, sprinkle with additional Parmesan or herbs before serving.
